Munch Madness!

I love Popchips, so when I saw them tweet about their Munch Madness Challenge I immediately sent them a direct message on Twitter. Basketball + game time snacking + Popchips = I’m in!

Munch Madness!

When contemplating my recipe, I initially thought, well since Popchips are my favorite healthy snack, I’ll make something fun, creative and healthy. But the more time I spent brainstorming, the more I thought to myself, “Healthy game time snacking? That’s an oxymoron!”

Now, I’m exaggerating a bit, because there definitely are dozens of healthy game time snacks out there (I love munching on carrots, celery, etc.) but to be quite honest – what I usually go for first are the wings, the chili cheese dip, the nachos…you get my drift…

So what did all of this thinking lead me to? Why the heck not take my favorite healthy snack and turn it into delicious (not exactly nutritious) onion rings?! Popchips of choice? My favorite – Sea Salt and Vinegar.

So without further adieu, I hereby introduce: Poprings!

Ingredients for rings:

  • 1 large onion sliced into rings
  • 1 1/4 cups flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 can seltzer*
  • 6 cups vegetable oil
  • 1 3oz bag of Sea Salt and Vinegar Popchips

Dipping sauce:

  • 3 tablespoons (Sweet Baby Rays) BBQ Sauce
  • 1 tablespoon (Lea and Perrins) Worcestershire Sauce
  • 1 tablespoon honey
  • Sprinkle of salt


1.       Add vegetable oil in large pot – heat on high

2.       Get a baking sheet ready by lining it with paper towels (set aside until needed)

3.       Place onions in a bowl of ice water for about 15 minutes or so; drain and dry

4.       Add (roughly) half of the bag of Popchips to a large Ziploc bag then crunch it up into small pieces (I didn’t use a food processor because I didn’t want it to become too fine…and because, well, I don’t have one!)

5.       Place the crunched up Popchips into mixing bowl, next add flour, cornstarch, baking soda, salt and seltzer – whisk

6.       Add the rest of the Popchips into a large Ziploc bag and crunch – place this into a bowl and set next to the batter

7.       Dip each ring into the batter first and then into the crunched up Popchips bowl and finally, into the oil. Be careful not to crowd the pot with too many rings.

8.       Once rings are a golden brown (about two minutes or so) scoop out and place on your paper towel lined baking sheet.

For the (very easy) dipping sauce:

1.       Add 3 tablespoons BBQ Sauce of choice (my choice? Sweet Baby Rays) to bowl

2.       Next, add 1 tablespoon Worcestershire Sauce

3.       Then 1 tablespoon honey

4.       Lastly, a sprinkle of salt – mix all together

Here we go!

100 Days of Kindness, Day 93

I’m not always the biggest fan of doing semi-uncomfortable things like giving a guy from work a ride home and worrying that the half hour drive in the snow will be an awkward one. But, one of my co-workers asked for a ride (his car is in the shop) and I was going where he needed to go, so I said of course!

It’s funny – you work with some people on a daily basis and literally know nothing about their lives outside of work. Then, someone asks you for a ride home and boom! You learn they have three siblings, lived in California for a while, loves Phish and has a Droid. It’s funny.

In other news…

I can’t believe we’re getting more snow!

Didn’t Rosario Dawson, Sofia Vergara, and Tina Fey look gorgeous at the SAG Awards? My favorite was probably January Jones (she is so fab!) and friggin’ Natalie Portman is the cutest thing ever.

I just responded to a tweet a little while ago, and won a prize from Popchips! I didn’t even know I was up for a prize! I loooove me some Popchips. :)

First of all, I would like to thank Colleen for allowing my guest post on her wonderful blog. 100 Days of Kindness was such an excellent idea, everyone should take part in this! It’s amazing how far one tiny act of kindness can go.

Well, it seems to be a typical rainy, windy Tuesday here on Long Island. Most mornings, I wake up around 5:45 and drag my tired little butt out to play nanny. The two boys I look after are a lot to deal with in the morning, but that’s what comes with the job, right? After surviving breakfast, the boys got dressed and I drove them to school. On my way back home, I saw three garbage pails rolling around the middle of the street ahead of me. Cars were literally coming to a screeching halt to avoid crashing into them. I noticed a woman rushing about, getting kids in the car and locking the front door. I pulled to the side of the road by her house and brought the pails to her driveway. As I dashed back to
my car, an attempt to avoid the inevitable water drench, I heard “Thank you so much!” Although I did not do this to get recognition, it is always nice to be appreciated (even for the little things)!

To all those par-taking in the 100 Days of Kindness- keep it up! I’m going to leave you with a little rainy scenery of my neighborhood. Have a great day everybody!

Today my kindness was going to 7-11 to fetch a few drinks for my co-workers. I mean I was going to grab a coffee anyway, so why not! I treated my friend Jess to some delicious Popchips (Jess chose salt and pepper flavor, I chose sea salt and vinegar – soo good) and a fountain soda as well (fountain sodas are who’s with me on that?)

Healthworks Blogger Bash!

Last night I attended the Healthworks Blogger Bash and it was awesome! I had such a great time mixing and mingling with all the fabulous women in attendance (there were about twenty of us.) Since I’m a relatively new blogger to the scene it was great to ask questions and get some answers from the more experienced bloggoddesses (just made that word up woopwoop.)

We started with a spin class at Healthworks Back Bay (I was so late! but snuck in a pretty decent workout for those 25 minutes!) The instructor Eden Kessler was amazing, she played such good music. I wanted to hop off the bike and dance. After the class we showered and got ready in the beautiful locker rooms (I had some Vita Coco coconut water as well – very refreshing.) We met back in the lobby once everyone was beautified and headed to the T. All twenty bloggers plus the wonderful Healthworks ladies – Hannah and Judith – hopped on the T with all our swag. I felt like a kid again on a school field trip! :) The only thing we were missing were those leash things to hold everyone together!

Next stop was Alibi in the Liberty Hotel – which was once the Charles Street Jail. I had never been before so I was very excited! I’ve heard great things about Alibi and I must say, they are all true. The decor is fun, playing on the jail theme – celebrity mug shots line the walls which is really funny. There is an awesome outdoor patio – which was packed (so obviously the place is good!), the couches are comfy, the lighting is perfect, the food provided for us from Scampo = SO delicious.

Introductions :)

We were provided with amazing cocktails (thanks to Ripe drink mixers and Double Cross Vodka!) They were perfection- I started off with the strawberry Tom Collins drink they had going on (including some basil in there which was such a pleasant surprise – probably going to be my new summer drink) and then I moved on to a Bloody Mary (nice little kick to it) and even had a shrimp and a (green – my fave) olive on top. YUM!

I think I had dreams about this last night...

It was so great to meet a whole new group of people! All the bloggers were there – Meghan, Chelsee, Leslie, Jean, Julie, Alicia, Elina, Tina, the Healthworks bloggers, and a bunch of other fabulous ladies. Nice to chat with everyone!

When I got home I was blown away by the wonderful swag bags we received – can’t thank Hannah, Judith and all of Healthworks enough! So generous. :)
