I recently got to attend one of the historic Red Sox/Cubs game at Fenway with a few girls from work. It was such a good time! My first Sox game of the season. :)

The Jimmy Fund Fantasy Day at Fenway Park!

This past Sunday, Colin and I attended Fantasy Day at Fenway hosted by The Jimmy Fund – one of the most amazing organizations around. I was so happy to attend and honored to host a giveaway on the daily craic. The event was a lot of fun, it was so nice just getting to hang out and look around the park; we truly had a great time! And, itt was a beautiful day which made everything that much better.

My Top 5 Summer Desserts

{Thanks Foodies at Work! I think I might attempt a blueberry pie this week!}

I like a good dessert any day (in fact I eat at least one every day, yes seriously) but Summer desserts are special.  We have the opportunity to use fresher ingredients and perhaps have more time to make homemade treats.  If it’s sunny outside, there’s more incentive to take a walk to get a dessert.  Who doesn’t enjoy a pleasant stroll after big dinner – a stroll to a bakery? If you say no, I don’t believe you!  Here are my favorite desserts to eat during the Summer.

Blueberry Pie

You may be familiar with my thought that fruit does not qualify as a dessert.  Desserts, in my opinion, are unhealthy by nature.  Sure there are low fat and fat free options, but sticking fruit in there is like pouring chocolate on your broccoli – STOP! You’re ruining it!  (Hmm, new experiment?) But Summer rules are different.  Fresh fruit can totally be a part of a dessert in the Summer.  One my favorite summertime activities is picking berries.  And what’s a foodie to do with so many fresh berries? Put them in a pie, of course.

Making homemade blueberry pie is really simple.  For this pie I used store bought crust and filled the bottom crust with blueberries tossed with cinnamon and a little sugar, both white and brown. I cut the second crust into strips to make the criss-cross pattern and topped it with more brown sugar.  Bake according to your pie crust directions and if you want a little something extra, top it with homemade whipped cream!

Ice Cream at a Fenway

I don’t usually choose to eat ice cream, but stick it in a plastic Red Sox hat and I’m sold.  The soft-serve vanilla at Fenway, and probably other ballparks, is so creamy and delicious; it’s a perfect way to cool off on a hot day if you’re lucky enough to be there.  Big surprise, my favorite part of going to a game is the food.

Cupcakes

While cupcakes are not specific to Summer, they are and always will be my favorite dessert.  Cupcakes can be enjoyed in any season, but Summer is a great time to try new ones.  Remember that after dinner walk I mentioned? Go ahead and take one.  Find a new bakery and try a cupcake you’ve never tried before.  These cupcakes are from Buttercup Bakery in New York.  They’re special because last Summer I had a list of cupcakes I wanted to try and my friends not only went long with my cupcake plan, they tried them all with me. Do I have great friends or what? J

S’mores

A traditional summer campfire treat, I’m putting S’mores on my list.  Just graham cracker, chocolate, and marshmallow.  Three simple ingredients combine to make a crunchy, toasty, chocolately treat.  Make them around a fire on a cool summer night, or make them my way: open faced in the toaster!

Congo Bars

You might call them Blondies, which is fine with this blondie, but at my summer camp we called them Congo Bars.  I always looked forward to BBQs at camp because the dessert was always the same.  Half baked ooey gooey chocolate chip cookie bars.  We never cared about eating the possibly raw cookie dough because it tasted soooo good.  Make your own by following my go-to recipe, the one on the back of the Nestle Tollhouse chocolate chip bag.  Instead of dropping spoonfuls on a baking sheet, spread cookie dough evenly in a brownie pan and under cook them just a little!  Here’s my cookie dough:

Adam + Rihanna = BFF

This past weekend blurred from business trip in Philly into beach, friends, heat, and the Atlantic Beer Garden. I got back from Philly on Saturday morning around 10am then went right down the street to the beach with Colin, Phil, and Reid. Then Liz and Kelly met up with us! And then we saw some friends from Merrimack who I haven’t seen since graduation, which was so nice! Busy day at the beach. :)

Saturday was beautiful out, not a cloud in the sky. Luckily there was even a breeze, thank the dear Lord. After a while we were getting ancy (and hungry!) so we went back to my apartment and grilled up some delicious burgers and had a few beers. After eating I was full from Colin’s grilling goodness plus I was burnt and wiped out from the sun so I took a wonderful, glorious, refreshing nap.

When I finally crawled out of bed we got ready and headed to the Atlantic Beer Garden. What a fun place! There were a ton of people lined up outside when we got there and lucky for us Colin spotted DJ Wyatt who we all went to Merrimack with. He brought us in with him so we skipped out on the line – and believe you me, we all felt pretty cool doing it.

We sipped, we danced, we laughed, Kelly met a few potential suitors, we danced some more, and then it was time to go home! This place is a good time, the rooftop is perfection fyi.

Sunday was deathly hot. Seriously. Colin and I were sitting in my apartment with no AC about to kill each other because the heat was making both of us extra irritable. It wasn’t pretty. We fled to his apartment for shelter and AC. We both cheered up immediately.

Another lucky thing happened – Sunday night, Colin made me a delicious steak dinner with baked sweet potatoes and green beans. It was amazing, he did such a great job!

Last night Megan, Lisa and I went up to NH to meet Mrs. O and her friends MaryJo and Fran to help with the wedding programs for the church as well as the table numbers, etc. I can’t post the pictures I took of those (because they’re a surprise!) but I do have a few other photos from the night. We had such a great time! :)

Peace and quiet

I’m in the house by myself. I’m currently sitting in my room in peace and quiet. It’s honestly a miracle after the past few days I have had. I’ve been going non-stop and let me tell you – it is draining. Do you ever feel like all the energy is just sucked right out of you? Or that there aren’t enough hours in the day? Ugh, why can’t I be a superhero? They can do everything…

Anyway, I am SO SORRY for not posting yesterday and all of today! I’m not following the rules of ‘no excuses, blog like a champion.’ I’m ashamed of myself and will strive to be a better blogger everyday. Especially for you Jean!

So tonight I helped judge the science fair at Meg’s school (Bellesini Academy in Lawrence, all boys grades 5-8.) At first I felt stupid, ‘Wait what is the variable? The thing that stays the same or the thing that changes?’ ‘And the control is the opposite, right?’ Ugh, I was never good at science.

I learned a thing or two which was nice. The judging part was hard, they all did a nice job so I was throwing 5’s out left and right (scale of 1-5, 5 being the highest score.) I didn’t want the people tallying up the points to think my scoring was fishy, so I threw in a few 4’s and one or two 3’s – it was stressful. Oh, I also think it’s worth mentioning that the boys at Meg’s school all think Meg and I are twins – mainly because we’re white, tall and have blond hair. They get a reeeal kick out of saying ‘Miss Mescall ‘and having both of us turn around to respond. Oh adolescent boys!

Ok back to the Celtics… At this point I don’t even care how up and down they’ve been lately because you know why? They put Lebron in his place yesterday, which in turn put Celtics fans in their place as well – their happy place. The game was a nail biter and I honestly didn’t know if they could finish. They were up twenty points at times – they were ahead the whole game – but at the end it was thisclose! I’m pretty sure Lebron along with the rest of the Cavs thought they were going to pull through and win, but they didn’t! I’m so proud of the Celts! C’s 117, Cavs 113 :)

Yesterday was also opening day at Fenway – the Sox played the Yanks – and also won! Big day for Boston sport’s fans! Sox 9, Yankees 7.
